    Pork Tamales... Pig's Head?

    So on Saturday my husband and I are going to make tamales by ourselves for the first time. We have both made them before but have always had the immediate help and direction from someone else. So this should be interesting! But I have a question... my husband wants to make them from cabeza de puerco. Sounds nasty to me but he insists they are delicious. Here's my question... how do you cook the head? My husband keeps saying we need a pressure cooker. Can't I just boil it in a pot? Also, about how many tamales could I expect to get out of 1 lb of masa preparada? I am not sure how many pounds I should buy. Any tips or recipes that anyone would like to share?

    Your husband is right!!! Are so delicious , you can boil it in a normal pot it takes about 1 to 2 hours to cook depend on how many pounds of meat you put to cook, La cabeza is a really soft meat ,except las orejas they are hard but you can eat it with tortilla as a taco with cilantro, cebolla, lemon and salsa mmm, and a pound of masa last for about 15 tamales more or less all depend of how many masa you put on your corn leaf. Tell us how you like it

    The reason your husband is saying a pressure cooker is because he doesn't want to boil and lose the juices of the cabeza. The cabeza has a delicious flavor and the meat is cooked in it's own juices. What we do is get a big pot and make a foil rack at the bottom(which is basically balls of foil at the bottom so it doesn't stick) or even a turkey roaster that has a rack in the pot. Put water on the bottom just so that it boils but not on the head and you steam the meat or also in the oven. They do come out delicious.
